Why it matters

Why commercial kitchen exhaust cleaning matters

Every service, cooking vapors carry grease and residue up into the hood, through the filters and into the ductwork and exhaust fan. Over time those deposits build up in places a nightly kitchen crew can't reach. Accumulated grease in an exhaust system is a recognized fire risk, which is why regular inspection and appropriate cleaning are part of responsible commercial kitchen maintenance and fire-risk management — alongside the kitchen's fire-suppression system and the requirements of the local fire authority.

Planned service overview

What is involved in kitchen exhaust cleaning?

An educational overview of the components a kitchen exhaust cleaning program typically inspects and cleans:

  • Exhaust hoods and canopies
  • Grease filters and baffles
  • Accessible grease ducts
  • Exhaust fans
  • Other accessible components of the ventilation system
  • Documentation of the work performed

This is an overview of the planned service, not a current promise of exactly what All-In will perform. The final scope will depend on qualified personnel, equipment, insurance, applicable standards and a signed service agreement.

Frequency

How frequently should restaurant hoods be cleaned?

There's no universal schedule. The right inspection and cleaning interval depends on cooking volume, the equipment and fuel type, how quickly grease accumulates and the fire-code requirements that apply to your property. Standards such as NFPA 96 describe inspection frequencies by type of cooking operation, and the local fire authority and your insurer have the final word for your kitchen.

Standards

Standards and qualifications

Commercial kitchen exhaust systems are addressed by NFPA 96 (ventilation control and fire protection of commercial cooking operations), and cleaning methods are described in the ANSI/IKECA C10 standard. All-In is not currently NFPA- or IKECA-certified, is not a fire-inspection authority, and does not perform kitchen exhaust cleaning today. Before launch, qualifications, procedures, insurance and applicable requirements will be verified. No service can guarantee fire-code compliance or prevent every fire.

FAQ

Restaurant hood cleaning — common questions

Does All-In offer restaurant hood cleaning in Milwaukee today?

Not yet. Kitchen exhaust and hood cleaning is planned to launch in January 2027 in Milwaukee and surrounding Southeast Wisconsin communities. Until then, All-In offers commercial kitchen deep cleaning of approved surfaces, floors and equipment exteriors.

How often should a restaurant hood be cleaned?

There is no single schedule for every kitchen. Inspection and cleaning intervals depend on cooking volume, the type of cooking and fuel, the equipment, how quickly grease builds up and the fire-code requirements that apply to the property. Your fire inspector, insurer and the applicable standards are the right references for your kitchen.

What is NFPA 96?

NFPA 96 is the National Fire Protection Association's standard for ventilation control and fire protection of commercial cooking operations. It addresses how commercial kitchen exhaust systems are designed, inspected and maintained. Local adoption and enforcement vary.

What is ANSI/IKECA C10?

ANSI/IKECA C10 is an industry standard published by the International Kitchen Exhaust Cleaning Association describing methods for cleaning commercial kitchen exhaust systems. All-In is not currently IKECA-certified; qualifications will be verified before the service launches.
